Totally YUMMY pancakes for breakfast!

You CANNOT imagine how long I've waited to sink my teeth into this?!
So, here's the recipe if you're interested. It's wheat-free.

1 cup almond flour
3 eggs
1 teaspoon baking powder
1/4 cup water
2 tablespoons oil (I'm using melted better the next time I make these!)
a good pinch of salt
I tablespoon sugar
1 teaspoon vanilla

Just dump everything into a bowl and mix. Then, onto the pan. Serve with big globs of butter and lashings of honey!!!!

This made about 3 big-ish pancakes, and both Chuan and I felt it was wayyyyy too much for breakfast. BUT, we haven't eaten pancakes in ages (it's not like we can go someplace and order some, seeing as how we're both wheat-free), so we stuffed ourselves like pigs!

The next time I make these, I'm adding some apples or blueberries, and I'm making this lot into four pancakes. Then, we'll have two, and two will go into the freezer for another day :)

  1. I have no idea where to get almond flour, but thanks for the recipe! Right now most of us are wheat and grain addicts, but will try this when we are ready for a healthier alternative! I want to make halloween pancakes.

    1. You can find almond flour/meal in the cake section of any supermarket. It's usually labelled 'ground almonds'. But, it's very expensive :(

      I get mine from 'Bake with Yen', in Taman Megah in Section 23, PJ. It's sold in kilos, and is way cheaper than the little bits sold at the supermarts.

      But, NOTHING can come close to how cheap wheat flour is - so it is prohibitively expensive in comparison, I'm afraid. So very sad!

      Being wheat-free has greatly helped me and Chuan. That's why we persevere.

    What about rice flour? Can it give the same results? purrr...meow!

    1. I don't know if you'd get the same results with rice flour. We make what we call a 'chinese pancake' with rice flour, and a bit of santan - it's flat and doesn't rise. So, I honestly don't know. If you do give it a try, tell me if it works, k?
